Creamy Potato Soup

A bowl of this savoury and comfort Cream of Potato Soup is just what you need to warm you up on a chilly day. You might want to give this recipe a shot:

Ingredients:

4 tablespoons of potatoes, peeled and cut into cubes
2 cups of broth made from vegetables
1 cup milk
1/2 cup of heavy cream
1/4 cup butter
1 onion diced
2 garlic cloves chopped or minced
2 tablespoons flour
Various amounts of salt & pepper to taste
1/4 cup of chopped chives or green onions
1/4 cup of cheddar cheese that has been grated

Instructions:

Bring the potatoes and vegetable broth to a boil in a large pot. Stir occasionally. Turn the heat down to low and simmer the potatoes for about 15 minutes or until they are fork-tender.

Butter should be melted separately in a pan over medium heat. After adding the onion and garlic continue to sauté the mixture for about 5 minutes or until it has become more tender. After incorporating the flour and continue to cook for a further one to two minutes

While doing so, whisk the milk and cream mixture constantly to prevent any lumps from forming. The milk and cream mixture should be poured into the flour mixture slowly. Bring the mixture to a boil, then decrease the heat to a simmer and cook for approximately five minutes or until the sauce has thickened.

After adding the milk mixture, potatoes and broth to the saucepan, stir the contents of the pot until everything is thoroughly blend. Salt and pepper can be add to taste as a seasoning.

Place a serving of the soup in each bowl then sprinkle the top with shredded cheddar cheese and chop chives or green onions.

This dish yields four servings, it is creamy and delectable and you have the option of adding additional toppings like as croutons bacon or sour cream, depend on your tastes.

It is crucial to note that if you are trying to reduce the amount of fat you consume you can replace heavy cream with low-fat milk and sour cream or you can use a mixture of regular milk and vegetable broth in its place. You can also change the consistency of the soup by adding more or less flour or by pureeing some of the potatoes to create a thicker consistency. Both of these options are available to you.
