A bowl of this flavorful and filling vegetarian tortilla soup is just the thing to warm you up on a chilly day. You might want to give this recipe a shot:
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 2 cups water
- 1 can diced tomatoes
- 1 can black beans, rinsed and drained
- 1 can corn kernels, drained
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sour cream
- 4 corn tortillas, cut into thin strips
- 1/2 cup shredded cheddar cheese
Instructions:
Prepare the sauce in a large pot by heating olive oil over medium heat. After adding the onion and garlic continue to sauté the mixture for 5 minutes or until it has become more tender.
Place in the pot the diced tomatoes, water, vegetable broth, black beans, corn, cumin, chilli powder, salt and pepper. First bring the mixture to a boil and then lower the heat and let it simmer for 15 minutes.
While the soup is coming to a simmer place the tortilla strips in a skillet that has been heated over medium heat. Cook, stir the mix occasionally until it is crisp and golden brown.
To serve ladle the soup into bowls then top each serve with a dollop of avocado, some chop cilantro some sour cream, some tortilla strips and some shredded cheese.
You could also add some dice zucchini, bell peppers or sweet potatoes to the soup in order to give it a little bit more of a nutritional boost.
This recipe yields four serves and is an excellent choice for a meal that will make you feel at ease. Depends on what you like you can also add additional toppings like diced jalapeo, wedge of lime or additional cheddar cheese. Other possible topping include.
